    Carrot Cookies

    • For carrot cookies, combine 2 eggs, 2 cups of boiled and pureed carrots, and 2 tablespoons of minced garlic. When the mixture is well blended and smooth, add 2 cups of unbleached flour, 1/4 cup of wheat germ, and 1 cup of rolled oats to the mixture; mix slightly. (Rice or rye flour may be substituted for the unbleached flour.) Pour the mixture onto a floured cutting board and use a rolling pin to smooth it out. Cut the mixture into round cookies or doggy shapes such as bones and doghouses, and bake at 300 degrees for 45 minutes to create delicious carrot cookies.
