What is a Pig Pluck?

Pig pluck is the edible internal organs of a pig. It refers to the heart, lungs, liver, spleen, and sometimes kidneys, trachea and esophagus, and occasionally the small intestines. Pluck from young animals, such as veal, is sometimes called heart sweetbreads.

Pig pluck may be simply boiled and served with bread stuffing or it can be sautéed with onions and served as a main course meal.
