What is eel sauce made of?

Ingredients

* 1/4 cup soy sauce

* 1/4 cup mirin

* 1/4 cup sake

* 1 tablespoon granulated sugar

* 2 tablespoons cornstarch

* 1 teaspoon water

Instructions

1. In a medium saucepan, combine the soy sauce, mirin, sake, and sugar. Bring to a simmer over medium heat, stirring occasionally.

2. In a small bowl, whisk together the cornstarch and water until smooth. Add the cornstarch mixture to the saucepan and cook, stirring constantly, until the sauce has thickened.

3. Remove the sauce from the heat and let cool slightly.

4. Serve the eel sauce with grilled eel or other Japanese dishes.
